What's for lunch?
Today it's fish. Tasty baked fish...
2 tilapia fillets (i get them frozen, for a buck, at the local grocery store). I used seasoned Lemon/Herb ones today.
about 1 cup mushrooms (I used baby bella pearls- whole. Slice if larger.)
salt, pepper
about 1/2-2/3 cups seasoned diced tomatoes
On a large sheet of foil put about 1/2 the mushrooms, one fillet, top with tomatoes. make the foil into a little packet, and repeat the process for the other fish. Bake at 350 for about 20 minutes (from frozen). Serve over your favorite grainy/starchy accompaniment. I used couscous with lentils, cooked in roasted garlic chicken broth.
It's tasty, healthy, and stupid simple. PLUS no cleaning, and a batch of 2 makes enough for lunch and dinner. Yum.
